Level/GUI design

I have a level made, and want to make additional levels, but with only about half objects in the level changing between levels. i.e. I have a score text object and I want it to be at the exact same place in all levels. I have many other HUD style things all done as static sprites.
Should I change all of that static stuff to GUI controls and place them in mainscreenGui? This seems like a good way to me, just wanting feedback from more expierinced people.
For one of then new levels I want to the level to scroll by and a fixed speed. I want to place many static sprites into the level. It will basically be a huge level (wide) and all of the sprites will scroll onto / back off the screen horizontally at a fixed rate. My question is what is the best way to edit a huge level like that? I'm not sure how to make the scene editor really wide so I can see the huge wide level. I know how to make the sprites move, I'm just having a problem making my scene really wide to viusally edit it. Any tips on that would be greatly appreciated.

I don't think you can make scrollbars show up. Just remember you can use your mouse scrollwheel to zoom in or out and right-click & drag to move your view around.
