How are people handling dialogue in their RPGs?

How are you guys handling dialogue in your RPGs games, did you have to make your own dialogue editor or something?
I'd be really interested in hearing what you did

I have each npc start off with an initial dialog, which often suggests keywords to try.

Ex. Welcome to the space academy recruit. Would you like a [tour]?

Then I would type the word tour and hed respond with an appropriate dialog,etc.

I never liked menus/multiple choices since it would mean I could not accidently stumble upon a secret quest. I liked sitting there for an hour trying various keywords.
