How do I delete the default servers?

If so.. then you just need to change the master server details within the script
iirc it's in starter.fps\server\defaults.cs

Err, can't find it. Is there a link to where I can set one up with GG?

GG does not host your server. They host a test server to demonstrate the capabilities of the engine and certain products. But they do not host private servers AFAIK.
