You are going to discover that once you learn how to model--in general--making a helmet will be quite easy. There are no special secrets when doing helmets, and you will be able to apply -any- modelling experience, e.g. from what you learned when following a car tutorial, or a head tutorial.
If there is a trick to modelling, the trick is not to focus too much--not get hung up on-- -what- it is you are modelling, but how you are going to approach and plan the modelling of it.
I hope I helped more than I confused matters. Good luck :)

Assuming you don't want to experiment and learn it all by yourself, and want to learn Maya not -just- to model helmets, I recommend you look at other tutorials if you can't find helmet ones. You are going to discover that once you learn how to model--in general--making a helmet will be quite easy.
