Would this kit still work for me in Canada if I had a lawyer check it out?

From looking at that site I would say that the kit is designed mainly for people who will be marketing a game in the U.S. as it has includes forms from the U.S. Copyright office.

The GameDevKit includes NDA agrrements and Contributor agreements. Plus it includes a great article that explains how and when to use these forms and how to start a game company. Tom Buscaglia is very open with talking to indies and helping out the community. Give him a call and he will be more than happy to talk to you about the kit and help with the contents. Some Canadian Companies have actually purchased the kit also, so i think you will be fine.

Tell him Kenny sent you, I work with him so i know exactly what is included and it is really worth it.

Several people have used it there, though you are correct that it is best to have a local attorney review it to make sure it complies with CA law. But then, I recommend that anyone who uses any forms for anything do the same thing.
