I doubt there's a tutorial on human anatomy modeling, apart from modeling a human figure (the outside). You'll have to just find reference pictures (a good anatomy book), then learn how to model in general. Do a search for Psionic's milkshape tutorials... those are probably the best for milkshape. For maya tutorials (as well as some generic tutorials) check out www.learningmaya.com

If anyone else has any ideas or knowledge about 3D human-body models (internal, I mean! ;) ) or resources, please chime in--I'd love to hear about it!

Calvin, I'd be very curious to hear what you find out about 3D human anatomy modeling. I'm an MD involved in medical education (on the faculty of a med school) and I'm curious about what's out there as far as 3D models. Especially when it comes to the skull, students have a very hard time getting a perspective (pardon the pun! :) ) on the 3D visualization of anatomy. Even dissection-based visualization isn't as simple and instructive as you might think, because it takes a very skilled dissector to lay things out in a clearly illustrative manner--plus, most folks just have trouble visualizing in 3D in the first place. If anyone else has any ideas or knowledge about 3D human-body models (internal, I mean! ;) ) or resources, please chime in--I'd love to hear about it!

There are some tutorials on the milkshape website. Don't know if you already seen that or if you just looking for some others.
