Heads up...
I tried running both ThinkTanks and Orbz on my new Windows 2000 Server OS and neither of them launch. I'm assuming it's a torque thing but have not yet tested with RW or the torque demo app.

Easy enough to fix:
Right-click on your desktop and choose Properties to pull up the Display Properties dialog.
Choose the Settings tab and hit the Advanced button
Click on the Troubleshoot tab and you should see a slider for Hardware acceleration. Crank this all the way up and you should be good to go =)
I almost hate to admit it took me a week to figure this out but inspiration finally hit late one night!

...responding to confirm that Matthew was correct and my 2003 is now playing torque based games (What, a server OS playing games? What a shock!) now that the hardware slider was pushed all the way up.
